The best vines are hand selected each year from the Terraced Hillside Vineyard just south of the winery. The sustainably farmed grapes are handpicked, carefully sorted, and then fermented for an extended period of time in a small open top tank with manual punch downs every four hours. After fermentation and a light press, the wine is placed in new French oak barrels for thirty six months. Unfined and unfiltered.
Pouring this wine is like letting a genie out of the bottle. Evocatively dark and brooding, the black fruit with cocoa adds to the complexity of this wine and allows your three wishes to be granted: flavor, balance, and agelessness.
